Ingredients and seasonings required in prepare
  1. Prepare 1 kg Chicken
  2. Prepare 1 cup Curd
  3. Take 2 tsp Ginger garlic paste
  4. Prepare 1 tsp coriander powder
  5. Take 1 tsp Red chilli powder
  6. Take 2 tbsp Lime juice
  7. Use 1 tsp pepper powder
  8. Prepare 1 tsp fennel seeds
  9. Use 1/2 tsp pepper cones
  10. Take 1/2 tsp cumin
  11. Use 6-7 fenugreek seeds
  12. Prepare 1 small stick cinnamon
  13. Take 4 cloves
  14. Use 2 tsp coriander seeds
  15. Prepare 6 dry red chillies
  16. Prepare 2 tsp jaggery
  17. Prepare 2 tbsp tamarind pulp
  18. Take 1 cup water
  19. Take as needed Ghee
  20. Prepare as needed Curry leaves
  21. Take to taste Salt

Like this Manglorean Chicken Ghee Roast. Take chicken, yogurt, salt and turmeric powder in a bowl and mix well. Take it in a blender and add garlic. Heat ghee in a pan, add in curry leaves.

Instructions to cook Chicken Ghee Roast curry:
  1. Marinate the chicken with Curd, ginger garlic paste, coriander powder, chilli powder, pepper powder, lime juice and let it rest in fridge for at least 1hr
  2. Meanwhile in little ghee roast 15 Cloves of garlic, 1 piece shredded ginger, all the other spices
  3. Add the tamarind paste to it and stir in 1 cup water
  4. Let it thicken.. Cool and grind it
  5. In little ghee cook the marinated chicken closed
  6. In another pan.. Heat Ghee throw the curry leaves and cook the grinded masala and jaggery and cook
  7. When the ghee separates add the cooked chicken and fry it in the masala
  8. Done and ready to serve!

Add onions, chillies and salt and saute till golden. Add in chicken and mix well. Add in tamarind pulp and stir fry for one more minute. Add chicken back in stir well to combine. In a mixing bowl, add curd, turmeric and lemon juice and mix well.
