- Take 28 oz can crushed tomatoes
- Prepare 14.5 oz can diced tomatoes
- Use 3 (15.5 oz) cans of beans, see below
- Prepare dark or light red kidney beans

- Prepare 1 large diced sweet onion
- Take 1-2 med/large diced zucchini
- Take 3-5 sliced baby bella mushrooms
- Prepare 1/2 large diced green pepper
- Prepare 10 oz bag frozen sweet corn
- Prepare 3-5 minced garlic cloves
- Use 1 1/2 tbsp chili powder
- Prepare 1/4-1/2 tsp cayenne pepper
- Use 1/4 tsp salt
- Prepare 1/4-1/2 tsp black pepper
- Prepare optional: chipotle chiles
- Prepare 1-1 1/2 lb meat optional, see below
- Prepare ground beef or turkey
- Use beef or pork roast
- Use pulled or diced chicken
- Prepare seafood (mussels, scallops, shrimp)
You'll hear it sizzle and it will start turning dark brown. Push the meat to one side of the pan. Transfer chiles and liquid to a blender. Add ground spices, chocolate, tomato paste, coffee, anchovies, soy sauce, and Marmite.
How to cook All-Purpose Chili:
- In a large crock pot or large stovetop pot (Dutch oven), add the cans of crushed and diced tomatoes first. Drain the cans of beans and add them next, followed by the remaining vegetable ingredients. Blend together well.
- Using the 28 oz tomato can, add 3/4 to 1 1/2 cans of water, depending on taste; more water yields a thinner chili. Add the garlic and spices, and blend well together.
- Season the meat separately, and add to the pot. Pictured is sliced beef roast, which I seasoned with a Moroccan spice blend rub.
- For the crock pot, you may cook on low for 8-12 hours (depending on your pot), or start on high for 2-3 hours followed by low for another 3-4 hours. For the stovetop, cook on medium-low or low, depending on time, until meat and veggies are cooked through.
- Done and ready to serve!
