  1. Prepare 64 oz Chicken Stock
  2. Take 10 oz Thick Cut Bacon
  3. Prepare 4 lb Potatoes
  4. Prepare 3 bunches Green Onions
  5. Prepare 7 cloves garlic
  6. Use 1 tbs dried thyme
  7. Take 1 tbs Morton Nature Seasoning
  8. Use 1 tbs Adobo Powder
  9. Prepare 2 tsp Black Pepper
  10. Prepare 1 cup Sour Cream
  11. Prepare 1 cup Heavy Cream
  12. Prepare 1 2/3 cup Sharp Cheddar Cheese

If desired, use an immersion blender to smooth out lumps. Directions In a large skillet, saute onions in butter until tender. Add the broth, potatoes, potato flakes, bacon, pepper, salt, basil, thyme and remaining water. Place potatoes in a pot, cover with water, season with salt and cook until tender then drain.

  1. Peel & cut up the potatoes, garlic & the green onions then put to the side for later (make sure to keep bottoms of green onions separate from tops)

  5. Add all the dairy & 8oz of the bacon then reduce to a simmer for 25-35 minutes then blend together (immersion blender recommended but any blender will do). Serve topped with sour cream, cheese, bacon bits & green onion tops.
  6. Done and ready to serve!

Add onions and butter and sautee until soft. Whisk in flour, milk and broth until smooth. Cool potatoes until easily handled and cut into cubes. Use a potato masher or immersion blender to mash the potatoes until the soup is to your desired thickness. Season the soup with smoked paprika, cayenne, salt, and pepper.
