Ingredients and seasonings required for prepare
  1. Take 1/2 cup Lemon juice (2 lemons)
  2. Prepare 1 tsp Sugar
  3. Take 1/2 cup Canola oil
  4. Prepare 2 clove Garlic

  6. Prepare 1 box Mushrooms
  7. Prepare 1 as needed Sunflower seeds or pine nuts
  8. Use 1 cup Drunken goat cheese

In a small saucepan, combine the oils, chile powder, and garlic powder. In a mason jar combine the lemon, extra virgin olive oil, salt and pepper. Cover the jar and give it a good shake until the ingredients are well combined. In a wide salad bowl add the arugula.

Step by step to cook Drunken Arugula Salad:
  1. Set oven to 425. Quarter mushrooms and toss in olive oil. Spread on baking sheet and bake for appx 15 mins or until they have dried out. (Moist mushrooms won't do). Set aside once done.
  2. While mushrooms are baking toast pine nuts or sunflower seeds
  3. Mix cooled mushrooms into salad bowl with arugula, cheese and pine nuts or sunflower seeds.
  4. In food processor mix together lemon juice, sugar and pressed garlic. Slowly add in the canola oil. Once blended coat salad and serve!!
  5. Grate drunken goat cheese. (Regular goat cheese will not work as it's too soft) Can replace with other cheese. I sometimes use asiago.
  6. Done and ready to serve!

In a large bowl add the arugula, blood orange segments, goat cheese, pecans and cooled farro, toss to combine. Drizzle with glaze just prior to serving. Arugula will add a serious kick to your salad by giving it that peppery taste. It will honestly take a salad from bland, to a kick-ass, fresh, make you wanna dance salad (maybe not literally, but it sure will taste better). When using arugula as a base for a salad, I recommend keeping the salad simple.
