  4. Add potatoes, broth, garlic paste, saffron, bay leaf, thyme, salt and pepper. Stir well, then simmer over medium heat until the potatoes are tender.
  5. Blend the soup in blender to get smooth texture and then add a few choppped & sautéed mushrooms
  6. Ladle soup into bowls and garnish with parsley.
  7. Done and ready to serve!

The paste will coat the potatoes. When it reaches boil, turn down to simmer. Simmer on low till soup thickens. Drain, reserving liquid and setting vegetables aside. In the same pan, saute onion in butter until tender.
